Sapa is noted for its dishes made from temperate vegetables such as “rau cai meo”, cauliflowers, chayote buds and so on. These dishes are popular with visitors when they come to Sapa to explore the land, people and Sapa green cuisine.

In Sapa, there are many kinds of local, exotic, temperate and tropical fruits. Especially, due to a temperature change in each day and season, the flavors of fruits here are different from fruits in other places. Fruits in Sapa include peaches, plums, pears and so on. Especially, Sapa is also home to valuable medicinal herbs and fresh vegetables and flowers. People in Sapa serve themselves with dishes made from these fruits and vegetables. Thus, all year round, fresh vegetables and fruits can be seen in markets in Sapa. 

Along the way to Thac Bac (Silver Waterfall), there are many frames of chayote. Some frames are about 1 hectare in width. In those frames, there are only 20 or 30 chayote trees. Every two years, local people rebuild those frames. Every year, Sapa distributes thousands of tons of chayote fruits to different parts of the country. Visitors are all impressed with dishes made from chayote buds and fruits.

There are many kinds of vegetables in Sapa. And they are used for making many different dishes. Among those dishes, the most special dish is “Cai dang” (mustard greens). Hmong ethnic people grow a lot of mustard greens and they are often used in their daily meals. “Cai dang” can be found in morning markets. “Cai dang” in Sapa is very clean. Local people often boil or stir-fry “Cai dang”. This vegetable has also appeared in many different parts of the country.

There are many kinds of vegetables and fruits in Sapa. For example, peaches, plums, pears, wild strawberries, cabbages, pumpkin buds and so on. In addition, there are peach jam, plum jam, dried shiitake mushrooms. These kinds of vegetables and fruits are all fresh. Visitors often come to Sapa town’s market to get some insights into and enjoy local dishes. Apart from other local specialties, vegetables dishes also make a strong impression on visitors. Once visitors have a chance to enjoy them, they will never forget their flavors.

Dishes made from cress often appear in daily meals. Cress has a delicious flavor. In addition, dishes made from cress provide us with iron, calcium, folic acid (vitamin M), vitamins A and C, thus preventing us from getting different diseases. In addition, dishes made from cress help cure some diseases such as bronchitis, prolonged cough and so on. Dishes made from cress give us an appetite and contribute to diversifying daily meals.
